Rainbow Potato Salad Recipe


      INGREDIENTS

  • 2 medium potatoes
  • 1 small onion
  • 1 whole smoked bell pepper pickle
  • 1 small cut of red cabbage (you can see in the photo below)
  • 5-6 pieces of fresh parsley
  • 3 tbsp olive oil 
  • 1 lemon
  • 2 tsp of salt

      HIGHLIGHTS
  • Bell pepper pickle gives a nice hint of sour and smoked taste compared to vinegar. 
  • There is no spice. This refreshing version of classic potato salad is distinct only by its smoked aroma.


      STEPS

Clean the veggies, and prepare your ingredients.



Cut potatoes into 2 or 3 pieces and put them into water. Boil until they are softened. You can check it with a fork.



Cut the red cabbage into small pieces.



Cut bell pepper pickle as same as the red cabbage.



Cut onion into 1x1mm pieces. This way, they give the taste moderately; if you cut bigger, they will give a sharp onion taste in the mouth, which can be unpleasant.


Add 3 tbsp olive oil.



Add the juice of one lemon and 2 tsp of salt. 



Add chopped parsley and mix the ingredients.



Meanwhile, remove your potatoes from the water and wait for them to cool. Cut into 1cm cubes after peeling off.



Add potatoes to the bowl and mix well.
