Vegan Ciğköfte


      INGREDIENTS

  • 4 Cloves of garlic
  • 4 tbsp tomato paste
  • 4 tbsp paprika paste
  • 6 tsp isot or red chili flakes
  • 8 tbsp olive oil
  • 2 medium potatoes
  • 1 cup fine bulgur (köftelik bulgur)
  • 1 medium onion
  • 1 tsp ground black pepper
  • 1 tsp ground cumin
  • 1 1/2 tbsp of salt 
  • 6 tbsp of pomegranate syrup 
  • 4-5 pieces of parsley

      HIGHLIGHTS
  • Best enjoyed resting overnight.
  • Pomegranate syrup is a must if you can't find it you can replace it with sumac syrup or sour plum syrup. If you don't have any of these you can substitute with lemon juice.
  • You can alternate the amount of your isot/red pepper flakes to your hotness expectation from the çiğ köfte. 


       STEPS

 Crush 4 cloves of garlic, prepare 4 tbsp tomato paste and 4 tbsp paprika paste.


Mix the pastes in a bigger container, then add 4 tbsp of olive oil.


Add crushed garlic.


Add 6 tsp red pepper flakes (or isot flakes)


Mix well and let it rest for one day in the fridge.


Clean well 2 medium size potatoes and prepare 1 cup fine bulgur(smaller than regular bulgur, bigger than semolina flour)


Cut potatoes into 2 or 3 pieces and put it into water. Boil until they are softened, you can check it with a fork.

    
Meanwhile, put bulgur to a large bowl and add one cup of boiled water on it.


Cover the plate to make bulgur soak the water well and become softer.


Peel boiled potatoes and grate them with a rough grate.


Then grate a medium onion with a fine grater in order to have an onion puree.


After waiting for 15-20 minutes to bulgurs soak the water and soften, add the onion puree and red paste you made yesterday to the bowl.

   
Add 4 tbsp of olive oil.


Add 1 tsp of ground black pepper.


Add 1 tsp of ground cumin and 1 1/2 tbsp salt.


Add 6 tbsp of pomegranate syrup.

     
Add finely chopped parsley.


Mix well all the ingredients and knead for at least for 5 minutes. Potatoes will give the paste-like textured of the çiğ köfte in this way.


  Rest for at least one night. Cover with stretch film to prevent the outer part from dry. The more it rests the better it tastes :) It can stay up to 6 days in the fridge.

   It looks just like the ones in çiğ köfte shops and taking part by part under that foil will make you feel like you are just eating at your local öz elazığlı çiğ köfteci ... ustam's desk :))))
