Vegan Hot & Sour Soup
INGREDIENTS
- 3 Cloves of garlic
- 1 thumb of fresh ginger
- dried hot chili pepper (amount depends on your taste)
- 2 tbsp sesame oil (substitute with sunflower oil if you don't have)
- 2 tbsp sunflower oil
- 5 medium mushrooms
- 2 medium carrots
- 3 spring onion stalks
- 2 tbsp corn starch
- 1 cup of cold water
- 1 lt vegetable stock
- 1 tbsp sesame seeds
- 1 tbsp chili flakes
- 1/2 cups of soy sauce
- 1/2 cups of vinegar
HIGHLIGHTS
- Don't overcook carrots and onions. You shouldn't cook them more than 5 min. or they will soften and lose their freshness.
- You can adjust the sourness for your taste by adding more vinegar or balance it adding more soy.
STEPS
Clean the veggies.
Cut the carrots as julienne and mushrooms 2 mm thick.
Cut the spring onions roughly.
Dice garlic and ginger very thinly.
Add 2 tbsp sesame oil to the pot.
This amount of chili can be really challenging, use half of it if you are not from Mexico or Urfa :)
Put dried chillies to the pot and cook them for 3-4 min on medium heat. Be careful not to burn the garlic.
Put mushrooms and cook until they release all their water (approximately takes 5 min)
Add 1/2 cups of vinegar, 1/2 cups of soy sauce and 1 lt vegetable stock and bring to a boil.
Meanwhile, add 2 tbsp corn starch to 1 cup of cold water and stir well until there is no lump of starch. Add this mix to the boiling soup slowly and stir well while adding it.
Add 1 tbsp sesame seeds after the starch is thickened (app. takes 2-3 min)
Lastly, add carrots and onions.
Stir the soup to spread veggies. Cook for only 5 min. then remove from the heat immediately.
This is how it looks after 5 min.
Soybean sprouts are a major ingredient but, we are in quarantine dude where the hell can we find soybean sprouts!
If you don't have vegetable stock just use plain water and put 2 more garlic cloves.
I will post how to make vegetable stock from scraps soon.
The original recipe is made with chicken stock and chicken breast. You can add one beaten egg into it before adding carrots and onions. But don't forget to stir well while adding it unless you want a giant white egg sheet in your soup :))
